More times than not, muffins tend to be more of an icing-less cake than a wholesome&nbsp;breakfast food.<\/p>\n<p>Finding a decent plant-based alternative&nbsp;can be a challenge. Luckily, I stumbled across a simple recipe online.<\/p>\n<p>I baked three versions: blueberry, chocolate chip, and walnut.<\/p>\n<p><a href=\"http:\/\/content.principia.edu\/sites\/sustainablefood\/files\/2017\/03\/fullsizeoutput_541.jpeg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-large wp-image-143\" src=\"http:\/\/content.principia.edu\/sites\/sustainablefood\/files\/2017\/03\/fullsizeoutput_541-950x1024.jpeg\" alt=\"\" width=\"660\" height=\"711\" srcset=\"http:\/\/content.principia.edu\/sites\/sustainablefood\/files\/2017\/03\/fullsizeoutput_541-950x1024.jpeg 950w, http:\/\/content.principia.edu\/sites\/sustainablefood\/files\/2017\/03\/fullsizeoutput_541-278x300.jpeg 278w, http:\/\/content.principia.edu\/sites\/sustainablefood\/files\/2017\/03\/fullsizeoutput_541-768x828.jpeg 768w\" sizes=\"auto, (max-width: 660px) 100vw, 660px\" \/><\/a><\/p>\n<p>All three types were delicious, but the chocolate chip was the most popular among students.&nbsp;<\/p>\n<p>The blueberry and walnut versions are excellent for breakfast or a light snack. while the chocolate chip is more dessert-like.&nbsp;<\/p>\n<p>You may be wondering, how do you bake muffins without eggs, milk, and butter? It&#8217;s simple. Coconut (or vegetable) oil replaces the butter, ground flax seeds replace the egg, and a nondairy milk (such as almond) replaces dairy milk.&nbsp;<\/p>\n<p>And yes, the chocolate chips are dairy free. They&#8217;re made by <a href=\"https:\/\/www.vitacost.com\/chocolate-dream-baking-chips-semi-sweet-chocolate\">Chocolate Dream<\/a> and unfortunately they cost twice as much as regular chocolate chips :(. Hopefully that will change as the demand for non-dairy products increases.<\/p>\n<p>To score some additional sustainability points, I used mainly organic ingredients.&nbsp;They&#8217;re a bit pricier, but that&#8217;s how food should cost.&nbsp;<\/p>\n<p><a href=\"http:\/\/content.principia.edu\/sites\/sustainablefood\/files\/2017\/03\/fullsizeoutput_542.jpeg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-large wp-image-144\" src=\"http:\/\/content.principia.edu\/sites\/sustainablefood\/files\/2017\/03\/fullsizeoutput_542-1024x768.jpeg\" alt=\"\" width=\"660\" height=\"495\" srcset=\"http:\/\/content.principia.edu\/sites\/sustainablefood\/files\/2017\/03\/fullsizeoutput_542-1024x768.jpeg 1024w, http:\/\/content.principia.edu\/sites\/sustainablefood\/files\/2017\/03\/fullsizeoutput_542-300x225.jpeg 300w, http:\/\/content.principia.edu\/sites\/sustainablefood\/files\/2017\/03\/fullsizeoutput_542-768x576.jpeg 768w\" sizes=\"auto, (max-width: 660px) 100vw, 660px\" \/><\/a><\/p>\n<p>Some of the ingredients were sourced from <a href=\"http:\/\/www.grassrootsgrocery.org\/\">Grassroots Grocery<\/a>, a local co-op&nbsp;in Alton, Illinois. I also bought ingredients from an co-op in St. Louis called&nbsp;<a href=\"http:\/\/localharvestgrocery.com\/lhg\/\">Local Harvest<\/a>.<\/p>\n<p style=\"text-align: center\"><strong>Feedback<\/strong><\/p>\n<ul>\n<li>James Skinner 7.5\/10<\/li>\n<\/ul>\n<p>&#8220;They&#8217;re good. If they&#8217;re an option, I&#8217;ll go for them. They taste really good and I love how they&#8217;re a bit healthier compared to most muffins. I&#8217;m always for the healthier option.
